This version of a greek salad from Charlie Allred combines some traditional ingredients with her own preferences and tops with her homemade dressing.  


This recipe makes 4 servings and has less-than 6g net carbs per serving.

Ingredients

Salad:

  • 2 cups lettuce of your choice
  • 1 tomato
  • 1 cucumber

Add any other traditional ingredients you'd like, such as olives and onions, and adjust nutritional information accordingly.

Dressing:

  • 1/4 cup lemon juice (or substitute with red wine vinegar)
  • 1/2 cup avocado oil (or substitute with olive oil)
  • 1 TBSP Italian seasoning
  • 1 tsp granulated onion
  • 1 tsp garlic powder
  • 2 TBSP crumbled feta cheese

Directions

Chop the tomato and the cucumber, and add them to lettuce.

The dressing starts with 1/4 a cup of lemon juice. Then I add 1/2 cup of avocado oil. You can use olive oil for this diabetic greek salad dressing. But, I like using avocado oil as it’s one of my favorite products and I usually have it on hand. Then I added some Italian seasoning, granulated onion (you can use fresh) and garlic powder (you can use fresh). The last ingredient is feta cheese! It helps the dressing gain a little creaminess without the use of mayo. I add all the ingredients to a small mason jar and shake it up. Let it sit for maybe 5 minutes before you drizzled it on your greek salad. Enjoy!
